What we recommend in the manual is to create MacOS (or other OS) partitions
with that OS's partition program, and create Linux partitions from within
the installer or later using fdisk (mac-fdisk in this case).

Also, when you put the new drive in, you will still have a MacOS to boot 
from? Even the installer needs MacOS to boot.
