Please note: There _is_ _no_ HTTP standard yet (although it once was
planned for being released in July 2001). RFC 2616 ist just a proposed
standard.

Apache usually has the operating system type as comment, so why not
replace the "(Unix)" with "(Debian GNU/Linux)", so this should at
least be nor problem with RFC 2616.
My suggestion would be to say
Server: Apache/2.0.37 Debian/3.0 Linux/2.4.18 (GNU) mod_foo/0.42 [...]
or even
Server: Apache/2.0.37 Debian/3.0 (Woody) Linux/2.4.18 (GNU) mod_foo/0.42 [...]
or -- less irritating --
Server: Apache/2.0.37 (Debian/3.0 GNU Linux/2.4.18) mod_foo/0.42 [...]
BTW: The same problem is present in the Apache 1.3.x branch.
